Chef Duong, a passionate Vietnamese cook with a dream of sharing the vibrant flavours of his homeland, opened the doors of Vietnam Restaurante on Calle de las Huertas — and the city’s dining scene has never been the same.

From Hanoi to Huertas

Chef Duong’s journey to Madrid was driven by a single conviction: that authentic Vietnamese cuisine, prepared with traditional techniques and the freshest ingredients, could win the hearts of Spanish diners. Rather than adapting recipes to local tastes, he chose to stay true to the bold, balanced flavours that define Vietnamese cooking — fragrant herbs, slow-simmered broths, crispy textures, and the perfect interplay of sweet, sour, salty, and spicy.
