The broth is the foundation. Beef bones are slow-simmered for over 12 hours with star anise, cinnamon, cloves, cardamom, and charred ginger and onion. This long, gentle cooking process extracts every layer of flavour, producing a broth that is rich, aromatic, and deeply satisfying — yet remarkably clean and light on the palate.

The noodles are traditional rice noodles (Banh Pho), silky and tender, chosen specifically to complement the broth without overpowering it.

The toppings — thinly sliced beef, fresh herbs, bean sprouts, lime, and chilli — are arranged with care, allowing each diner to customise their bowl to their own taste.
